#OOTD – Split Back Blouse

Last night I had the opportunity to attend a banquet for my Mom’s Club.  I know what you’re thinking…Mom’s Club?  But, joining this group was one of the best decisions I made after having my son.  Not only do we have play dates, share advice & go on field trips, but we also have fun “mom only” get togethers.  Our banquet last night consisted of dinner & drinks at a local Italian restaurant.  The spread was fantastic, the wine was overpoured & the conversation was hilarious; I love these women!

I hate to say this out loud in fear of jinxing myself, but I think spring has finally sprung in Pittsburgh!  The sun was shining a warm 70 degrees yesterday making it the perfect day to wear my new split-back blouse.  I was waiting for warm weather to showcase this style since layering a jacket on top would defeat the purpose of the split-back.

I decided to pair this bold blouse with a dark wash flare denim and my Tory accessories.  I know I’ve mentioned this before, but I love mixing casual or trendy styles with classic pieces such as my Tory Burch wedges & handbag.  I added a bold lipstick that matched the pink hue of the blouse making this outfit that much more playful!

New Spring Staple – Denim Jacket

I have been on the hunt for the perfect denim jacket for quite some time.  The jackets I find are either too long, too tight in the shoulders or just not what I’m looking for.  The other day after dinner my husband & I decided to run into Old Navy to pick up some sweatpants for our little nugget.  He’s going through yet another growth spurt and is constantly making messes; Old Navy is the perfect place to pick up pants he’ll likely only wear a few times.

While perusing the aisles, what did I find?  Non-other than the perfect denim jacket!  Who would’ve thought?!  This jacket was the right shade, the right fit and on sale for under $30.  Win-win-win!

Yesterday I incorporated the jacket into my wardrobe by pairing it with a basic black legging and a graphic tee, which I also picked up at Old Navy for $10.  I love mixing casual pieces with chic essentials such as my Tory Burch Reva Ballet Flats and Chloe + Isabel Statement Necklace.

The weather in Pittsburgh has been anything but dress-appropriate lately.  I cannot wait for the sun to make an appearance so I can layer this jacket over a maxi dress or jumpsuit!

Hungry for Healthy Pancakes

I love seeing my son’s eyes light up when I ask if he wants pancakes for breakfast.  It’s by far his favorite mealtime option.  I make a big batch of toddler-size pancakes at the beginning of the week; enough to eat now, save for tomorrow & freeze for the rest of the week.

Over the months I’ve experimented with different recipes, trying to find that perfect balance of yummy & healthy.  Today I think I finally came up with the perfect combination & I am so excited to share it!

Lemon & Blueberry Pancakes

In a small bowl, whisk together the dry ingredients

1 Cup White, Whole Wheat Flour.  I use King Arthur brand.

2 TBSP Lemon Infused Sugar.  I used the reserved sugar from the Citrus Peels I made last month.  As a substitution, add lemon zest to 2 TBSP sugar.

2 TSP Baking Powder

In a medium bowl, whisk together the wet ingredients.  Once combined add 1/2 cup whole organic blueberries.

1 Cup Unsweetened Almond Milk

2 TBSP (melted) Coconut Oil

1 Large Egg

1 TBSP Fresh Lemon Juice

Add the dry ingredients to the wet ingredients & mix until just combined.  Heat a large skillet over medium heat (greased or nonstick).  Add TBSP portions of the pancake mixture to the heated skillet.  You can make the pancakes as big or small as you like.  Tablespoon portions work best for us; my little man usually eats them grab & go style as he plays or watches the cars rush to work.  Once the pancakes start to bubble it’s time to flip.

We usually eat these as is, but you can serve them with maple syrup, agave nectar or even strawberry preserves.  Enjoy!
